Easy high protein, high fiber mini-pancakes
Easy breezy homemade high fiber & protein mini-pancakes. π₯ I love this recipe because as a woman over 40 I am looking for meals that tick 3 major boxes:
- Sustainable energy: No sugar crashes or mid-morning slumps.
- Actually filling: Thanks to a decent hit of protein and fiber.
- Zero faff: They’re easy to whip up, even on a Tuesday morning.
These are my go-to on a weekend or even during the week as they're so quick to make.
One portion is mega filling (perfect for brunch) and gives you a whopping 51gr of protein βοΈ
Ingredients (for one hungry π€€):
- 1 small banana π
- 1 scoop of whey protein (I use MyProtein white chocolate) = one scoop is 32gr
- 2 eggs π₯
- 35gr rolled oats
- a little bit of water if you want your pancakes flatter
For the topping:
- 50gr frozen strawberries/ blackberries / mixed berries π (defrost them & heat in the microwave so they go nice and gooey / runny)
- 80gr Skyr natural yoghurt
- sprinkle of cinnamon
Directions:
π₯ blend all ingredients together
π₯ heat the pan (I use a little bit of olive oil)
π₯ grab a large spoon and make 3 mini pancakes at a time. As soon as they brown, turn them over
β‘οΈ TOP TIP: pop a plate / dish in the oven on low heat so you can keep the pancakes coming out of the pan, warm until you’re ready to serve them. π
Once ready, stack em high π₯ top with the Skyr and add the gooey (warm)berries. π€€
